One of my roommates was 90% vegetarian. Every once in a while she got a craving for something else, but most of the time her meals were non-meat based. She used to make these tacos and they always looked so good that when she offered me one, I had to try it. I am a sucker for anything crunchy, so the fact that these are baked in the oven and get nice and crisp was a huge attraction. Best of all it solves the issue of what to do with left over mashed potatoes.
Sometimes I make a huge batch just to be able to make these.

Packaging the Leftovers, and Reheating
- As this is a left-overs meal, I have never frozen these after making them. Reheating in the microwave is fine, but I still prefer to put them in the oven for a couple of minutes on a low broil to crisp up the taco shells. Otherwise, the tortillas were rubbery.
- It works in a pinch to take to work, microwaving for about 1 minute, flipping over, and then microwaving for another minute. However, I bring guacamole or sour cream to dip them in since I don't get the satisfying crunch.
