I have arranged this page according to the main protein source in the recipe. Chicken is what I fix most often, so it has the primary position in the list below, but I am trying to add more recipes to every section as I develop recipes that are worth sharing.
Most of the recipes are designed for at least two portions, one to eat now and one to put away for later int the week, or into the freezer for longer storage. If it's a week's worth of meals, I will let you know that too. If you like the recipe, cook a double batch and set aside more in your freezer. The prep time increases a bit, but not double, and neither will the cooking.
One side note: I am not fast in the kitchen with my prep work, plus I am taking pictures as I go, so I have not timed these recipes for the standard prep-time and cook-time that you often find in cookbooks. However, when timing is essential the the recipe (like minutes in the oven) I will let you know that information within the directions.
