I love traditional lamb gyros, and if you are making gyros, you need Tzatziki to go with it. I have developed my own version.

Customize to your tastes:
- Add fresh dill to the tzatziki sauce.
TIP: Sometimes it is hard to find plain Greek Yogurt. You can make an approximate by taking regular plain yogurt and straining out more of the whey. line a few layers of cheese cloth in a wire strainer. Place strainer over a bowl that is larger and deeper than the strainer, and then pour the yogurt into the strainer. Cover the top with plastic wrap and let it drain overnight, or until you have he consistency you are looking for.

Packaging the Leftovers, and Reheating
- If I have more than I use with the Gyros meal, I will use this up as a dip with veggies, or pita or naan. It doesn't go to waste.
