There are times when I just need to have some dessert. But cooking up an entire cake or a pan of brownies just means that I am going to eat them all. If I package up cookie dough just right, I can thaw out 1 cookie, bake it up and add a scoop of ice cream and be satisfied. Warm cookies right out of the oven are just so tasty!
Upgrade Tools Needed
- Cookie Sheet, or a mini cast iron cookie pan
NOTE: I got mine as a cookie kit at a Bed, Bath and Beyond years ago. The cookie mix was used up quickly, but the pan remained.
Directions
- Preheat oven to 25 degrees less than the directions call for on the regular cookie recipe as it will have to cook longer and slower to not burn the outside or the bottom and get fully cooked through.
- Take out the cookie dough and flatten into a disc about 1/4" thick.
- Lightly grease the cast iron pan with butter.
- Place dough in center of pan. It should have a little bit of space around the edges so that the cookie has room to expand.
- Bake for the normal time on your recipe and then check to see if it is done. It should take a couple minutes longer than the normal recipe since you've reduced the temp.
- Cook for 2 minutes longer, check, and repeat as necessary the first time you cook up each recipe. As long as the dough is the same temperature (i.e. room temp versus direct from fridge), you should know how long it will take to cook up that cookie dough after your first try. But, since you've been opening and closing the oven, losing heat each time, always check 2 minutes before you think the cookie should be done. Burnt is not tasty!
- Remove from oven, top with ice cream (optional of course!) and dig in! Beware of the pan though as it will still be hot!

- Pick different cookie doughs to try out.
- Add different toppings.
Packaging the leftovers, and Reheating
- Normally I have to work to only thaw out enough cookie dough for one pizookie. If it is a log, I can sometimes break off a chunk and put the rest back in the freezer.
- If I am making cookie dough however, you can easily package 4 oz portions for thawing out later!
