Chicken is my primary protein, so this is a staple in my house. My favorite curry is actually a Japanese Mix my sister introduced me to when her husband was station in Northern Japan. It is readily available in the US, in a few different heat levels.

Packaging the Leftovers, and Reheating - updated 12/15/20

- I like to add about 8 oz of rice to the bottom of the bowl and then top with the curry mixture. I let the bowl cool down before I add to my freezer, making sure I label and date the top of the container.
UPDATE: I am now using the divided rectangles for this dish. I put the rice in the small section and the curry in the large portion. That way I can stir them separately, or even remove the rice to cook in a separate bowl to make sure everything gets warmed through. - I've found that the rice bowls defrost more slowly than other dishes. 24 hours in advance, pull out a container into the fridge to let it thaw out. If you forget, like I often do, you will want to use the defrost setting on the microwave before reheating.
- At work, I pop the top of the container to allow the steam to escape, but leave the lid in place for splatter, and microwave for about 3-4 minutes. Stir the sauce, and check the center of the rice by pushing the backside of your utensil into the mix. If it comes out cold still, you need more time.
- I will often bring a fresh component for the next day in a smaller container, like some sliced carrots for crunch, picked vegetables like bean sprouts, or a handful of cilantro. Add to your plate after reheating in the microwave so it doesn't wilt. Experiment with options you like. Variety will help keep you from being bored.
